We started our whiskey journey.

We’re Kevin, Morgan, Chase, and Cora Holy — a family born and raised in the heart of Geauga County, Ohio. For nearly 25 years, our roots have been in the woods, collecting sap and crafting award-winning maple syrup with care, precision, and a deep respect for tradition.

What began in 2008 with a few tapped trees and a pot on our kitchen stove in Montville has grown into a full-fledged maple syrup operation. Today, we manage over 1,000 trees across 12 acres, using a modern tubing system but never straying from the hands-on approach that earned us the 2021 Grand Champion title at the Geauga County Maple Festival — the World Series of syrup, as we like to call it. Our love for crafting bold, honest flavor has now led us to a new adventure: whiskey.

Built on the same values that shaped our syrup — patience, precision, and pride in every pour — our whiskey is a natural extension of who we are. We’re bringing the same dedication to detail, the same connection to the land, and yes, even the subtle influence of maple into every barrel we age. Whether it’s syrup or spirits, we believe in doing things the right way — no shortcuts, just craftsmanship passed down, built up, and shared with you.

Starting off as a maple producer, we built our roots around tradition, hard work, and the natural richness of the forest. Tapping trees and crafting pure maple syrup taught us patience, precision, and a deep respect for the land. As our passion grew, so did our vision — leading us to expand into whiskey making. By blending our maple expertise with the art of distillation, we’re creating small-batch spirits that honor our heritage while offering something bold and new. It’s a natural evolution: from sap to spirit.
